Asparagus, basil and lime granita

INGREDIENTS

  • 2 bunches asparagus
  • 1 cup basil leaves
  • 200 ml orange juice
  • 500 ml water
  • 3 tablespoons maple syrup
  • 4 ice cubes

ELABORATION

Cut 2 inches off the hardest part of the asparagus stalks.

In a pot of boiling water, add the asparagus. Cook for 8 minutes, drain and set aside in a bowl of ice water. Add the basil leaves to the boiling water and cook for 30 seconds. Set aside with the asparagus. Strain together.

In a food processor add the asparagus, basil, orange juice, water, maple syrup and ice cubes. Blend at maximum power for a few minutes until smooth.

Serve the smoothies in glasses.
