Baby spinach, mandarin, avocado and cherry tomatoes

INGREDIENTS
- 150 g baby spinach leaves
- 4 mandarins
- 2 avocados
- 150 g cherry tomatoes
- 4 tablespoons extra virgin olive oil
- Salt
ELABORATION
Wash and drain the spinach leaves.
Peel the mandarins removing all the white parts until the wedges are clean.
Peel and cut the avocado into small cubes
Place a base of spinach on plates and top with mandarin wedges, avocado and cherry tomatoes.
When serving, add olive oil to each plate and a pinch of salt.
