Vegan chia, apple and cinnamon pudding

  • 2 cups plant-based milk such as soy, almond, coconut
  • ½ cup chia seeds
  • 2 tablespoons maple or agave syrup
  • 3 red apples
  • 2 juiced lemons
  • ½ teaspoon ground cinnamon
  • 4 cinnamon sticks


In a bowl, add the plant-based milk, a tablespoon of maple or agave syrup, chia seeds, and mix. Let the pudding set for 2 hours in the fridge covered with cling film.

When serving the breakfast, wash and cut the apples into cubes with skin on and seeds removed. Place them in a bowl and add the lemon juice. Add a spoonful of maple or agave syrup and the ground cinnamon. Stir again and let stand 5 minutes before serving.

In glasses, place a couple of spoonfuls of diced apple macerated with lemon juice and cinnamon. Next, add a few spoonfuls of chia pudding and top with more macerated apple.

Finish with a cinnamon stick to flavor and enhance the presentation.
