Citrus crêpes with orange, berries and cocoa spread

  • 100 grams whole oat flour
  • 250 ml almond milk or other plant-based milk
  • 1 egg
  • Zest 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt to taste
  • 2 oranges
  • ½ bunch mint

To serve with the pancakes:

  • Healthy cocoa/hazelnut spread
  • Assorted berries
  • Honey


In a bowl, mix the oat flour, almond milk, eggs and lemon zest until you have a batter without lumps. Cover with cling film and put in the fridge for 30 minutes.

Heat a frying pan over medium high heat and add a drizzle of olive oil. Add a ladle of the batter and cook until it starts to bubble on the surface. You can flip the crepes with a spatula or with the help of a plate. Cook for a few more minutes on the other side and set aside.

Repeat with all the crepes.

Peel the oranges, removing all the white parts. Cut into slices. Clean the mint leaves.

On a plate arrange the crepes, some orange slices and mint leaves.

Note: You can serve the crepes with healthy cocoa spread, berries, honey, etc
