Orange and coconut chia pudding

  • 1 orange
  • 1.5 cups coconut milk, etc.
  • 1/3 cup chia seeds
  • 3 oatmeal cookies
  • 2 tablespoons maple or agave syrup
  • 2 vegan coconut yoghurts
  • 80 g blueberries
  • 1 sprig mint


Grate the orange peel and set aside. Peel the orange removing all the white parts (albedo) until the wedges are clean. Set them aside.

Grind or crush the oatmeal cookies and mix in a bowl with the coconut milk, orange zest and chia seeds. Leave to stand in the fridge for 2 hours covered with cling film.

In each glass or jar that you will use to assemble the dish, arrange a generous base of chia and oatmeal pudding. Top with a couple of spoonfuls of coconut yoghurt.

Finish with some orange wedges, mint leaves and a few blueberries.
