Asparagus puff pastry with mozzarella cheese and serrano ham

INGREDIENTS
- 2 bunches green asparagus
- 1 gluten-free puff pastry dough
- 200 g lactose-free shredded mozzarella or melting cheese
- 8 slices of serrano ham
- 1 egg yolk
- White and black sesame seeds
ELABORATION
Wash and cut the asparagus, keeping the tips and the top tender part of the stalks.
Spread the puff pastry on the kitchen table and cut into squares of approx. 15 x 15 cm.
Place the puff pastry dough sideways in a diamond shape on a baking tray with baking paper. Prick the dough with a fork. Make 2 doughs per person.
On each puff pastry place a slice of ham, three asparagus, and some mozzarella cheese.
Close the puff pastry making two folds towards the center and spread the surface with beaten egg yolk with the help of a brush. Sprinkle some black and white sesame seeds.
Finish the puff pastry in the oven preheated to 200ºC for 20 minutes. Serve immediately.
